Choc-Berry Pudding


  • 1 cup of steel-cut oats
  • 1 tablespoon of black & white chia seeds
  • Almond milk
  • 1 tablespoon of cocoa powder
  • 1 1/2 cups of mixed berries
  • Pinch of cinnamon
  • 3 tablespoons of orange juice


  1. Place oats, chia seeds, cinnamon and enough almond milk to cover the other ingredients in an air-tight container and stir until well combined
  2. Place the lid on the container and refrigerate for 3 hours or until thick
  3. While waiting for oats mixture to thicken, place berries and orange juice in a small saucepan
  4. Bring to a medium heat until bubbling and reduce slightly while gently mashing the fruit
  5. Cook for a further 10 minutes, occasionally mashing until the fruit is well combined
  6. Refrigerate the berry mixture until oat mix is ready
  7. If after 3 hours the oats are still a little firm, add a splash more almond milk, stir and leave to absorb
  8. Once the oat mixture is thick, add cocoa powder and blend until smooth
  9. Combine with berry mixture or serve on top

Choc Berry Chia Seed Pudding

Chia Nuggets


  • 1 RSPCA-approved chicken breast, cut into small chunks
  • 1 cup of flour
  • 1 whisked egg
  • 1/2 cup of black & white chia seeds
  • 2 slices of wholegrain bread (great way to use up stale bread)
  • Dried oregano, rosemary, salt & pepper
  • Olive oil spray


  1. Preheat oven to 180 degrees Celsius
  2. In a food processor, blend bread until course crumbs are formed
  3. Add chia seeds, oregano, rosemary, salt and pepper and blend until combined
  4. Pour crumbs onto a large plate
  5. Toss a couple of chicken pieces in flour and transfer to egg mixture to coat
  6. Roll through the crumb mixture and place to the side until all are done
  7. Once all chicken pieces are crumbed, place on a large baking tray
  8. Spray lightly with olive oil and turn oven down to 160 degrees Celsius
  9. Place tray in the oven for 25 minutes, turning at 10 minute intervals
  10. Cool for 5 minutes and serve

Chia Chicken Strips

Chia Seed Crackers

1/4 cup of chia seeds
1/4 cup of sunflower seeds
1/2 teaspoon of sea salt
1/4 cup of steel-cut oats
2 tablespoons of flax seeds
1 cup of filtered water
1/4 cup of unrefined wholegrain spelt flour or buckwheat flour
2 tablespoons of extra virgin olive oil
Preheat oven to 150 degrees Celsius
Add all ingredients to a bowl and stir until well mixed
Rest the mixture for 30 minutes to allow the chia seeds to absorb the moisture
Spread the dough on a piece of non-stick parchment paper
Place a second piece of parchment paper on top of the first and roll the dough as thin as you desire
Once rolled out, remove the top piece of parchment paper
Cut the dough into any shapes you please
Place the tray into the oven for 30-40 minutes or until golden brown and crisp
Remove from the oven and cool for 5 minutes before serving
