Recipe #1: Coconut Prawns

COCONUT-PRAWNS
Preparation Time: 25 mins
Cooking Time: 20 mins
Serves: 6

Ingredients:

  • 1 cup of shredded coconut
  • 1/4 cup of flour
  • 2 eggs (whisked)
  • Vegetable oil
  • 24 green prawns peeled (with tails still attached)
  • 24 English spinach leaves
  • Tamarind sauce

Method:

  1. Put flour, coconut and egg in 3 separate bowls
  2. Dip the prawns in flour (shaking off any excess) and then dip in the egg and coconut
  3. Add oil to a wok until it gets to a depth of 5cm and heat to 180°C (medium-high heat)
  4. Place prawns in oil and cook for 3 minutes (or until golden)
  5. Place cooked prawns on a plate with a paper towel to soak up excess oil
  6. Repeat until all prawns are cooked and serve with spinach leaves and tamarind sauce

Recipe #2: Oysters Kilpatrick

Cooking Time: 5 mins
Serves: 4

Ingredients:

  • 2 cups of rock salt
  • 24 shucked oysters
  • 2 tablespoons Worcestershire sauce
  • 200g of diced bacon
  • 2 tablespoons of diced parsley
  • 1 lemon (quartered)

Method:

  1. Preheat grill to medium-high heat
  2. Place a thick layer of rock salt on a baking try and arrange the oysters on the tray
  3. Sprinkle the Worcestershire sauce over the oysters and top with bacon
  4. Grill until bacon is crisp, then top with parsley and serve with lemon
