Recipe #1: Coconut Prawns
Preparation Time: 25 mins
Cooking Time: 20 mins
Serves: 6
Ingredients:
- 1 cup of shredded coconut
- 1/4 cup of flour
- 2 eggs (whisked)
- Vegetable oil
- 24 green prawns peeled (with tails still attached)
- 24 English spinach leaves
- Tamarind sauce
Method:
- Put flour, coconut and egg in 3 separate bowls
- Dip the prawns in flour (shaking off any excess) and then dip in the egg and coconut
- Add oil to a wok until it gets to a depth of 5cm and heat to 180°C (medium-high heat)
- Place prawns in oil and cook for 3 minutes (or until golden)
- Place cooked prawns on a plate with a paper towel to soak up excess oil
- Repeat until all prawns are cooked and serve with spinach leaves and tamarind sauce
Recipe #2: Oysters Kilpatrick
Preparation Time: 10 mins
Cooking Time: 5 mins
Serves: 4
Ingredients:
- 2 cups of rock salt
- 24 shucked oysters
- 2 tablespoons Worcestershire sauce
- 200g of diced bacon
- 2 tablespoons of diced parsley
- 1 lemon (quartered)
Method:
- Preheat grill to medium-high heat
- Place a thick layer of rock salt on a baking try and arrange the oysters on the tray
- Sprinkle the Worcestershire sauce over the oysters and top with bacon
- Grill until bacon is crisp, then top with parsley and serve with lemon
