LOW CARB: The Wonders Of Cauliflower

Many of us experience sadness when the words “low carb” are heard. Just the thought of cutting much-loved breads, pastas and rice from our diet can be scary at first. You may wonder how you’re going to fill your low-carb meals and remain satisfied? Well, the answer lies in one highly versatile, low-carb vegetable — cauliflower!


#1 Cauliflower Rice

Love rice? We have some good news, you don’t have to give it up completely! Simply use either a cheese grater or food processor to “mince” raw cauliflower until it resembles rice. This is a great substitute for fried rice recipes and only requires you to throw in the cauliflower with all the other veggies in the pan! Put away the rice cooker and try your favourite stir fry dish with cauliflower rice — it’ll cut down cooking time, too! Check out this recipe for inspiration.


#2 Cauliflower Crust

When starting a low-carb diet, it’s totally fine to break down and have a cry over the lack of pizza in your life. But once you’re done, pick yourself up and rejoice in the beauty that is cauliflower crust, A.K.A “you can still eat pizza and toasted sandwiches even when you’re cutting carbs”. #3 Cauliflower Mash

Prepare to cry again. The realisation of having to cut bread is usually followed by the realisation that one of our other favourite sides has to go — POTATO. However, just as with pizza crust, you can still have your mash and eat it too, using cauliflower! You may think that mashed cauliflower just couldn’t do justice to its creamy potato counterpart, but this recipe will change your mind.
